Adjacent means it's actually touching the angle, where as opposite means that you can draw and see a line between the angle and the side.

Those terms are usually used when talking about the sides of right triangles (triangles where one of the angles is 90 degrees).
Adjacent means "next to"
Opposite means "on the other side of"
The side opposite the right angle is the longest side and it's called the hypotenuse.
If we want to identify the other two sides, so we can use them to calculate stuff (trig functions usually) for the other two angles that are not right angles, we can note that the hypotenuse side will make up one side of the angle. Of the other two sides of the triangle, one will be right next to the angle (adjacent) and the other will be way over on the other side of the triangle (opposite).
Maybe this method will make it clear: For the angle you are interested in, imagine a bisecting line that splits that angle exactly in half. Extend the bisector line until it hits a triangle side. That will be the opposite side. The other side, that is not the hypotenuse, will be the adjacent side. Hope that helps!
