I think our expectations are raised when we watch TV. If we turn on a TV, we see professional stuff, and our expectations of the show is high. A good case for the Youtube videos is freddiew. It takes about 3 months to make his videos.

or how about since smosh is written by immature twenty year olds they think the same way we do so can find things that are funny to us. the professional riders have to "study" what we find funny.

Well, it's the same theory as Youtube. The videos on Youtube are generally un-professional, whether it's a bad camera, or unfunny or whatever. But when you see one that at least exceeds that like nigahiga you laugh and think it's good because you weren't expecting something that good.
On Scratch it could be choppy, unfunny, whatever. So when people see yours their funnier/better than average so they laugh even if they aren't as good as a pro or whatever. It's hard to explain.
