I don't know a lot about sensing. While i'm making my Scratch games I don't use sensing a lot so i'm a little confused about this.

This dang mic can't record anything. I dunno what is wrong. When I record my playing of my piano none of those green lines that says how high your playing at show up.

A sensor board has various sensors that can send values to Scratch, allowing things outside your computer to interact with your projects.
A Scratchboard was a small board with a sound sensor, light sensor, slider, button and 4 ports with alligator clips to measure resistance. The board connects to your computer through USB and then you can use the sensors and controls to interact with Scratch projects . They are now available as PicoBoards, and are almost identical.
