I usually define an RPG as any game where you control one or multiple characters, and the background information of the game is mostly complete (hence RPG = Role-Playing Game). I'm guessing that's what he meant when he said Zelda was an RPG.

It's action, because it's not turn based, but also an RPG because of the free roaming world, new weapons, new equipment, and HP "levels", as well as the Magic Meter.

This quote says that zelda is not an RPG. None of your sources say Zelda is an RPG, they just say it is kinda like an RPG which is what I am also saying. It has some elements of an RPG, but it is an action adventure game.
Games like Final Fantasy and WoW. Those are RPGs. They have Traditional RPG elements that Zelda lacks inculding Experience points, Detailed weapon statistics, and character classes amongst other things.

I agree with Archmage that it is not technically an RPG, but I think they are calling it an RPG because there is not usually an Action/Adventure category on most websites.

Um, experience points, classes, and leveling up is not what makes an RPG, they are called Role Playing Games because you play a role, in legened of Zelda, you play the role of Link or the hero of hyrule, I notice lots of you are saying that LoZ is not an RPG, but Final Fantasy is a Traditional RPG. LoZ is still an RPG, but maybe not a traditional one. This fight is stupid, no one even bothered to think about what RPG stands for. Can a mod close this, I have the feeling this will become a flame war if it isn't one already.

Do you actually play the role, or just control the sprite?
There is a big difference between actual role-playing, where the personality that you imbue the character with makes a difference to the plot, and just controlling a sprite representing a named character on screen.
If two different people playing the game can decide (for example) to portray Link as a good guy, an evil guy or just in it only for the money, and the decisions they make because of that portrayal have an impact on the ongoing story and final outcome of the game, then yes, its an RPG.
Otherwise, it isn't.

I can only name 3 true video game RPGs if you are right, Fable , KOTOR and Jade Empire.

Correct - though you can add Deus Ex, Neverwinter Nights 1 and 2 (and their expansions), Baldurs Gate 1 and 2 (and their expansions), Icewind Dale and Mass Effect to the list off the top of my head
