They should build in .app exporting (for Macs) and .exe exporting (for Windows) into Scratch 2.0. It would be in the Share menu probably. I know there are ways to do this already for .exe, but there is no up-to-date (with both Scratch 1.4 and OS X 10.7) method for .app. I'm guessing both of these would work in something like presentation mode.

You can always use BYOB. (I think exporting to .swf is both more likely to happen and more useful.)

Scratch 2.0 will have SWF export, I think. The whole thing is being made in Flash anyway.
