That is the infamous Disappearing Text bug. We are still trying to figure out what causes it and how to work around it. It may be related to large blocks of text in the project. Can you upload the project so I can see if I have the same problem with it?

The same thing happened to me. All I had to do was close out of Scratch (hopefully you saved everything) and reopen it and the text reappeared.
