Soon I'm going to release MacinCrash 'NetFail, which is about to hit DP1 (DPs only get released to NTSoft devs, but the final product will be ready not long after DP1). Mcrsh NF is fast and never crashes. Plus it's open source (and written in VB6)! I'm not trying to adopt a massive ego or anything; just throwing that out there.

Productivity:
evernote-a good app to keep notes and keep track of your tasks-MAS
wunderlist-same as above, more tasks than notes-MAS
todos-surprisingly, just an app to show all your apps as icons. Not a todo list.
dropbox-I think it's also for windows, but anyways, it just allows you to share files in the cloud, also works for online download to computers without program, iOS, etc.

Facetab-facebook in your menubar-MAS
Skype-VoIP, chatting
Graphics:
Gimp-a pretty complicated yet powerful graphic editor, can almost replace photoshop
Sketchbook (and the rest of the free kinds)-simpler than gimp, pretty good for banners and big art, not so good for smaller and more complex/detailed art-MAS
Skitch-a graphic editor similar to sketchbook, I haven't tested it out yet-MAS
Pixen-more on the gimp side and more complex, good if you can't figure out how to work gimp
Pencil-It's more of an animation tool, it's pretty cool
Developer:
XCode-to make mac apps and iphone apps-MAS
Textwrangler-to make any kind of document, HTML, ruby, JS-MAS
Geektool-A must if you like customization: this app allows you to have auto-updating desktops, like the time, calendar, weather, etc-MAS
Automator+Applescript (built in)-allows you to make scripts and workflows, like if you're doing a new scratch project, you can make it open your music, art, and scratch program all at once
Filezilla-FTP client
Utilities:
Wraparound-causes the mouse to go from one edge of the screen to another, good if you're plain lazy :P or have a lot of monitors
Nocturne-make the screen "night mode" where it becomes not as bright, also you can darken your menu bar
Deeper-use it to change some things on your computer, such as making spaces between icons on your dock, or changing the text on the login box
Freeruler-measure the pixel lengths of a line or box or something on your screen
grand perspective-look at the files on your computer as a picture, grouped together in sections by your folders, bigger boxes mean more space
WINE-IN ALL CAPS CAUSE IT'S GREAT, IT ALLOWS YOU TO OPEN MOST .EXE FILES
mono-same as above, but it doesn't work as well
Music:
Garageband (included)-mix tracks or make your own to make cool music, you might want a better one (see below)
Audacity-edit and delete parts of tracks
musescore-create sheet music and midi files on the staff
Browsers:
I really only recommend Firefox or Chrome. You can use Opera if you want, but I don't think disk space is a problem.
Chrome is great cause there's all the apps for it, good if you have a google account, but often crashes when trying to open pdf.
Firefox, if you want the extensions, you should use then. Both are good, but I use Chrome--the three tangent lines to a circle inside a bigger circle looks better to me. :)
Word Processors:
iWork-even though this costs a lot, I still had to include it. it's critical if you're going to use your computer for business or stuff where you need files neat and stuff-MAS $60
Bean-a really lightweight simple word processor, can create rtf(d), doc(x), xml, .bean, txt, etc. pretty cool if you want a free lightweight one, great on USB drives
OpenOffice-a complete word processor, presentation, spreadsheet, drawing, formulae creator, and database creator. however, sometimes it corrupts files, and that's how I originally got a B in my tech class. I got it changed though.
Last but not least, Games! Many people believe that Macs don't have good games. If they are that critical, Windows doesn't then either. Especially cause half of them infect your computer
Doukutsu-an epic game, also known as cave story, where you explore caves and fight monsters and bosses and stuff. has a storyline, not like minecraft. if you like just sandbox games, you might not like this.
Super Tux-a mario like game where you explore the 2d side-scrolling world
Super Tux Kart-a mario kart like game where you race karts against cpus or humans
Cubes-a cool 2d side-scroller where you can control cubes to make platforms and stuff-MAS
Neverball-a 3d labyrinth marble-rolling game, pretty typical like Super Monkey Ball
Neverputt-i believe it comes with the download of neverball, I'm not sure, but it's a minigolf game i think
Stencyl-a flash game making program, using blocks like scratch
starlogo tng-a 3d version of scratch, but with some differences
Scratch-... no explanation needed hopefully

There should be more, but I recently cleaned up my computer and then so I don't have most programs.

Here's some tips:
CMD-SHFT-3 makes a screenshot of your screen(s)
CMD-SHFT-4 makes a screenshot of a section you can crop
CMD-SHFT-4+space makes a screenshot of any window, menu bar, or dock.
CMD-tab allows you to switch to another open app, keep pressing tab while holding CMD to keep switching
CMD-space opens spotlight, which searches through your computer for files and applications and also does dictionary and calculations

That's a quick guide for you, ask me individual questions if you want.

You can also ask how to play the built in tetris and snake games.
