Yeah, but id need a hypothesis, variables, and i have no idea how that would fit into this

Ah, you need to use Scratch projects as the experiment itself!
I think designing a program designed to play a game could be a really cool idea for a science fair project (kind of like human brain vs. computer program?). The hypothesis could be that a human player plays better than a computer (or the other way around. It's your project ^^). Variables could be score, time, whatever determines the overall score in the game.
I got the idea for this after seeing djscope design an AI to play my 'Eat the Crabs' game (the original which can be found here). It shouldn't be too hard to design a simple game and then design a script to have the computer to play it, and then find some test subjects to play the game.
