I think the Kingdom Hearts and Super Mario Galaxy series have the best OST's. My fave KH OST's are:
1. Sanctuary/Passion ( the orchestral version is brilliant, too )
2. Simple and Clean (PlanitB remix and end of battle thingymabob ) ( It's so beautiful! D: )
3 . Hollow Bastion Theme (although somewhat repetitive  hmm  )

Also, I'm pretty surprised that Crush 40 (Some, Sonic music, I think...) isn't more popular, but then again, having the label "Video Game Music" taped on your back doesn't really help you get popular.  hmm
