Okay this is a very new topic to me, I am just wondering, you know in all those professional games like Super Mario Galaxy and those? You know how the save and when you play again it loads from the certain point you saved? How do you do that on Scratch? I am assuming it is using a list and a variable. I think I might know how to but please explain how you do it.

Yes, most people have all the needed variables saved in a list when you click a save button, then restored to the variables from that list when a load button is pressed. Just remember that the user has to save the Scratch project after saving in-game if they want their data to be preserved between sessions.

Can somebody explain how to allow a person save a project, and when they click a project and load the file they saved it will open their position they saved at? Like normal saving in Super Mario galaxy or Super Smash Bros Brawl?
