It would be nice if there was a way, as part of the 'save project' process if there was an additional reminder to check if authors want to add any tags or project notes.

Those who do often really enhance the process for others of understanding how something works, or of quickly tracking down creations which have particular attributes (eg: music, animation, robot, physics etc.). Not everyone will want to do this, but given a reminder, many might pause and add that kind of detail and information before finally saving and sharing.
