I have found that at unpredictible times the Scratch Editor decides to Blank all of the text values.
The only way to get rid of this is to restart the program which is annoying.
Once the program is started the sprite names are back and the menu strip at the top is too, but all the text in the costumes has disapeared and you have to open the costumes to re-render the sprites which is a hundred-fold more annoying than restarting.
It happens at random times. I will be repling to this post with a screenshot of the event

Ah, this sounds like the dreaded disappearing text bug. You generally get that when a lot of memory is being used, such as when there are many, many sprites and scripts in your project.

If you save the project once, everything will be back except the text inside costumes and backgrounds. After that just save it again. So, basically just save the project 2 or 3 times.

Just wait until Scratch 2.0
It's completely rebuilt in Flash so it won't have this problem.
