I can't believe I'm saying this...
...but you actually got me addicted to Minecraft. 
I even got a Premium Account for free. (YouTube rocks. 
)
So I've been playing this for a while and watching videos on it, and I'm clueless. I mean, it looks awesome, but some of it's confusing. Like, how do you make rollercosters, and how do you add lava and water onto your levels? I just need to know some basic stuff and I'll be good to go.

NO.
Unless that Premium Account was payed for by SOMEONE most of the MC fan community dislikes you.

"Rollercoasters" are made with mine cart rails.
Water and lava are obtained by finding a water or lava source and collecting it with a bucket. You can then place the source by right-clicking, and water/lava will flow from that spot.
For any more information, you should check out the Minecraft Wiki. It's really useful. I also recommend looking up some beginner's guides.
