How Do I Change the Look of My Project's Preview?

I noticed a bunch of project's previews show stuff that aren't even in the real project. I know they set that as the preview, but I have no clue how to myself. All my projects' previews just show a random frame of my project. Can I get some help here? =/

It's not a random frame...the preview shows the image that was on the stage when you shared it.  A common trick is to make a background or a sprite costume showing something an attractive preview image, have it showing when you share the project but have a green flag script hide it immediately once the game starts.
