Two instances on a MAC

I'd like to flip between a downloaded example and a scratch new instance.
I can open multple instances on GNU/Linux, however, I don't see away to do it on a MAC.

Mac is an application based OS; you can only run one window of a certain application at a time, unless the application is built to open multiple windows.

Well you can just open the .image file twice is how you would do it.
