They are animated GIFs like it was said before. You can make one yourself with programs like GIMP or find one on Google Images.

There is no script for "eating" other sprites. You would have to animate it so that it looks like it's being eaten. Lots of costumes, editing, and move blocks in your future!

Well the main effect can be done by going to the sprite that gets eaten and put something like:
When Green Flag Clicked
show
forever
if touching [sprite that eats this one]
hide
/if
/forever
