I've been doing scratch for about 2 days. I'm really good at games, but I'm afraid people will steal my scripts and stuff. How can I make it so they can't borrow/steal it?

Welcome to Scratch, Cloakedyoshi .
Their currently isn't, and never will be a way to prevent Sprite/Scripts etc: from being downloaded as it goes against what part of Scratch is about. When you upload your project to the site, you are instantly giving every other Scratcher permission to use a part of your project to make a new project/change things around. This isn't stealing, it's 'Remixing' which leads to newer Scratcher being able to learn more or being able to create more projects.. And if someone remixes your project, they obviously liked some of your work. .
The only time remixing is reportable is if your work IS stolen - as in literally stolen - as in a Scratcher just downloaded and re-uploaded your project and changed nothing at all. If this happens you can flag the project or report the user using the Contact Us link at the bottom of any page on Scratch.
Andresmh also made a good post summarising remixing here.

Can they export my sprites and scripts somewhere else and I don't get credit?

I'll upload tiny games. None of the stuff I'm going to use as a business later.

Sadly, that is true, and they are not shown as "remixes". DOn't worry, though. If you see someone who has the EXACT same project as yours, you can flag them; however, flagging is only imposed on specific areas, see more info here: http://scratch.mit.edu/forums/viewtopic.php?id=1081
Hope this helps!

Cool, then! I'll go check some of your projects if you want to.

I'm still confused at some stuff. Who's KAJ?

Kaj was an user a few years back. There were rumors that he hacked into people's accounts, but it was obviously not true and the Scratch Team couldn't find any evidence. He got banned from Scratch, but you don't need to worry about KAJ.
