I don't think many blocks have been taken away. Most of the ones that have were replaced by new features that do the same thing.
Do you mean sort of like the experimental blocks?

The blocks that are now obsolete were removed for a reason, usually because they caused lag or just weren't needed. If you really want them back, you can reactivate them using the Scratch browser. (Note that they won't work online.)

Actually, old blocks that were in older versions of Scratch will still work online - otherwise projects made in Scratch 1.0 and such that used obsolete blocks wouldn't be supported anymore.
