So...what is your ethnicity in other words? 
Just tell me below; it's a poll for something I wanted to know, not really school that much...
And don't say, like, American even though you are Korean, etc...
African?
Caucasion?
Russian?
Chinese?
etc. etc.
Oh, I'm Japanese by the way.

Anyway, what I know for sure is that I have Polish and Russian heritage.

Caucasian: Slovak and Scottish. my African-American friend calls me white boy. XD I am indeed quite light skinned, and I burn instead of tanning when outside.
P.S. this is a project for school? They'll probably ban it from the school when they see everyone so far is white.

At one point, it did had the connotation as a race, although, it was largely for the purpose of anti-discrimination laws in the 1980's - like what you pointed out, it is not really correct to say that Jewish is a race. You can read more about it here for some more info about it.
