MC Classic is the old version. You can't craft anything; all you do is place and delete blocks. If you want to make minecarts, you have to download Beta.
Or you could play on a Classic server; SP is kinda boring xP

Exactly, just download a cracked version of Beta - that'll let you play in single player but you'll still have to buy the game for multi player 
As you probably guessed already, roller coasters are made with the minecarts
