When you are working on your scratch software in the development environment (offline or online) there should be a pop up window that asks you if you want to save your changes when you close the program. This is standard in so many programs that it catches you off guard not to have it.

I believe this feature is present on Macs but not on PCs. And I agree with you...several times, I have lost work because of this lack.

This feature is on macs (look at my name). I wish it would be on Windows, or else we might have to run Mac on Windows
