I can explain teh whole thing now, I studied Jens' project. I will explain, but it will take A LOOOONG time for me to type, so please be patient.

Well, download flip, but when you go to add the block in the class mode, rename some. Than skip on over to saving it, and voila!

Under the instance mode (don't know what else to call it), click the ScratchScriptableMorph or whatever near or at the bottom, click varaibles, than go down to variable color indicator or something. Than change the values, accept, and file it out!

Class, not instance. Two totally different things, instance is for declaring a method, class is for actually making the block itself, with the method.

OK, I understand how to change the color of the variable (I have a purple one and a bright blue one) but do you know how to  change the font and/or get rid of the box all together.

You can change the fonts used in Scratch by editing the language localization files.  On a windows system you can find those at C:\Program Files\Scratch\Locale.  The default one will end in .POT and all the others will be .PO

I don't know how to get rid of the box.
