I opened up Scratch, and it said "Squeak!"... why?

Pretty much what the title says... why did it say "squeak" on the top instead of Scratch? I'm pretty darn confused!

I'm not quite sure, though I think it's another programming language

Squeak is an implementation of the Smalltalk programming language.  Scratch is written in Squeak and runs in the Squeak interpreter.  Squeak is running "under the hood" whenever you run Scratch.  I hope that's helpful!
