Or is it just a certain way of coding with these things that make some projects not work online? ... I'm a bit confused here.
I'd like to use a Variable so that I can keep the code all in one script for this first little project in Scratch, but if it messes with the online capability, maybe it'd be better if I just use seperate scripts.

For now I would recommend only hoping for smaller, simpler scripts to function correctly online. There is a massive thing going on with suggestions being gathered for improvements in the forthcoming Scratch v2 but I believe the main reason it is being fashioned is to make offline and online projects more compatible.
There are many posts, including a current one in AAS, that go into detail about online problems. If online functionality is something you desire, I suggest searching the forums for this nfo.

I'm not quite sure what you mean. Yes, variables and lists work fine online. (Usually) Are you looking for an Online Sensor? (Which does what it says: It detects if you'r using the online or offline player.)

Nah, I don't even have Java installed, so I just been downloading everything.
Usually, even if a project isn't good, there's at least some decent music I can snag.
The best thing I've found on here so far is Sky Ninja 1.6.
I want to eventually learn how to do that and make a Spider Man fan game.

So far, I've found no variable problems... although you're right to be worried. If the variables go haywire, almost every project would collapse, considering the frequency of variables used. At leas the When Green Flag Clicked doesn't screw up.... XD :p XD

Yeah. Good thing the Java player isn't that buggy. Any online project wouldn't do anything!

The variables and lists don't make a project not work online, unless you use a lot of them. Then, the project could possibly become too large to work online, but most of the time that doesn't happen.

and other sound blocks.

Variables and lists work just fine online. It's hard to find a project without variables. Ita mainly lag that causes the need to download.
