Shift-click the R, turn the fill screen off.

Alt-click (forgot if this is different for Macs) on the block until it says "variable block". Then select the red "menu for me" button from the halo. Find "change color" (nooo! American spelling!  ), then pick a colour. Et voila, c'est tout! 

How do I save that? i made all variable blocks dark blue, but then, when I clicked "turn fill screen on" "save image for end-user" and reopened it didn't work.

I never save what I've done, so I'm not sure 

EDIT: Try saving the project with the blocks moved into the central frame
