Is there a way to increase the Paint Editor Canvas size so it fills the entire screen?

No, unfortunately not... You're restricted to a 480*360 screen when using Scratch.
This looks like it would fit better in the All About Scratch section of the forums... I'll move it over there, just for you.

Well...Great idea! I need that too. You can make the editor not have to scroll anymore, but that's about it.

I think croyscratch means expanding the paint editor.
Resizing the paint editor would be pretty cool!

But even so the paint screen is 480*360.

Oh, that would be pretty handy! So when you're all zoomed in, there's a lot more scope.
Thanks for pointing that out But you can't do that

Then we'll get it implemented in Scratch 2.0!
But I'm too lazy to suggest it right now...

Maybe it could be like the sprite area - there could be a normal mode, 480x360, a smaller mode, 240x180, and a "presentation" mode, 960x720, or something like that.
That's brilliant!

Thanks!
I have good ideas occasionally.
