At the top-right corner, there are three icons - the left one is normal viewing mode, the middle one increases the scripting area (that's what you want) and the right one takes you into presentation mode.

Try boosting your screen resolution - this worked for me when I was creating a project with a very long script... Hope this helps 
Also, I think this would fit better in "All About Scratch" - I'll move it over there
