Okay, if you want to turn your file into an Mp3 file, just go to advanced in the menu bar, then convert selection to mp3.

Like Cyclone said, you can't convert locked music. Now, it doesn't lock music that you import to iTunes, so you can get music off of a CD or the Internet and it would let you. But please don't get yourself into trouble. It would probably be better if you used other music that is not copyrighted or made by you.
Anyway, if you want to set your options so you can convert, go to the 'Edit' tab at the top. Then click on 'Preferences'. Then go to 'Advanced' and click on 'Importing'. Change the 'Import Using' to mp3 or whatever file you want to convert to. Then save the options and voila. Now you can select any unlocked song (as in not bought from iTunes) and click on 'Advanced' at the top. There is an option that says 'Convert Selection to _____'. Click it. Done.
