Does anyone know how to reset a project back to its original Start setup (after viewing a project) so that hidden objects reappear when you press the green flag (Start button) again?

Do you mean the default project that loads when you open Scratch? Just press file-new.
If you want to reset the project, you'll have to put scripts in each sprite as for what they should do when the green flag is pressed, such as go to a certain location, reset their graphic effects, and show themselves. It's a little bit tricky to get a hang of, and make sure that you don't forget anything.
