Why is it that most people flock to the big collaborations, ignoring the new ones?

Well it's similer to tribal wars. People want to join the biggar tribes because they are... well better and would offer more protection for your village.
Though I've realised that the bigggar the company, the more pressure is normally on you. That's why small little companies rock.
Advertising your company in your sig is good, but how about a nice picture? Pictures in sigs make you remember the person/company. Like Tonk's old picture.

Since when did you start the tribal wars analogies? And it's incorrect (well, for war time). In a war situation, your goal is to either join no tribe or a small, local one. A large one will drag you into a big fight, and you'll have less troops to protect yourself. With a small local one, whatever is attacking them is an immediate threat to you, (and the other way round), and support comes faster.
So really...
Big tribe:
+ Lots of people for support
+ Scary for noobs (they don't want to attack you because of your tribe's points)
- Drag you into their fight
- There's always a bigger tribe. And when they come, you are dead.
Small tribe:
- Less people for support
- Less intimidating people with your tribe points
+ Your fight is their fight, and the other way round. After all, being close by they could be the enemy's next target.
+ Closer, faster support
+ Know each other more, less willing to just abandon people
- You can get owned by a bigger tribe if they try and go for you... Which they generally don't.

probably because they're more famous, like myredneptune said.
there are a large amount of companies though. maybe some of the scratchers are already involved in other ones?

That's the problem, there aren't many ideal ways to collaborate on Scratch. People tend to join big collaborations thinking the bigger, the better. But since Scratchers can only really chat through the forums and on galleries, collaborations split up and not much work gets done.
Also, like MyRedNeptune said, for prestige. Unknown Scratchers can become known, and possibly, famous for being apart of a big, popular company.
