I recently got a message saying that I was starting too many spam topics. I don't really recall starting things that I would consider spam. Could you tell me what would be considered spam on these forums?

Spam is pretty much anything that is pointless. For example: SPAMSPAMSPAMSPAMSPAM. It can't contribute to the topic, so it is spam. Also, think about whether or not you should be posting what you post in that specific forum area.

If I'm not mistaken, I believe your threads in the 'Miscellaneous' forum section I have a very important announcement (which was really that firestar likes waffles) and The Spamming Page were considered as spam threads. You can Contact the Scratch Team for any further details on the issue as they are the ones who send out private notifications on acts considered inappropriate on the Scratch website as a whole.
In terms of forum threads: Aside from threads that are clearly commercial SEO spamming, threads that have no defined topic can be considered as spam. Topics with misleading titles may also be considered as spam depending on the situation. Other situations where a thread may be closed if it gets too much off topic or if it results in too much fighting.

When you add something, think about who it benefits:
If it benefits the person who asked the topic/the scratch community as a whole, then it is not spam. If it simply propagates your own endeavors, such as just saying SEE MY PROJECTS! then it is spam. If it does neither, then it is arguable whether it is spam, but what's the point of adding it anyway?

Spam is:
• A post that has no value (ie. "lol")
• A post that is pure rubbish (ie. "amirnelaorh")
• A post that is just silly (ie. "I like waffles")
Follow those guidelines... and try and keep your posts useful.
