I bred an Aron with perfect IV's in every stat except for Speed and Special Attack. It has a couple of egg moves, but I need to finish HG/SS and transfer it so that I can get an Aron with Head Smash.

Or do you just mean that you put everstone on something to stop it from evolving and get some moves that it won't get after evolving?

Nuh uh. Using an Everstone to help get your bred Pokemon with the nature you want.

At the moment, I am trying to get an Adamant nature Aron with very good or perfect IV's in everything except SPATK (Speed isn't essential either, but it helps) and with Head Smash as an Egg Move.

Ninjask Speed Boosts + Swords Dance + Baton Pass + Aggron + Choice Band + Head Smash + Rock Head = WIN.
