I find that daisy on the mach bike is the best combo, baby daisy on the bullet bike is good too. The flame runner isn't that good online because of the horrible acceleration and you get hit a lot online.

Again, if you practice using it, you're not at an disadvantage. There is a special way to get back to full speed if you got hit, without accelerating. Press and hold b, than a (all quickly), and hold those buttons, and you will start to see blue sparks. Once you see the blue, let go, and you get an immediate boost. This way there isn't as much of a drawback.

Why would you use those?

Karts are dead in MKWII, look at all the world record trials, they all use bikes. Bikes have inside drift which help their turning massively. Here is what bikes I think you should use

bullet bike: Good balance of acceleration, speed, and turning. The downside to this is that it doesn't have the best top speed.

Mach bike: The most well rounded bike, it has better top speed than the bullet bike but worse acceleration, and turning.

Flame runner: Its made for speed, it has better top speed than the Mach Bike but worse turning, and acceleration.

Torpedo: Good for speed and nothing else, gets wrecked in stages with a lot of turns. Used mostly for time trials.

Also, the character you pick does matter because they add stats. Baby Daisy, Daisy, and Funky Kong are normally used because they add to top speed.

Bikes are rubbish. It's called Mario Kart - not Mario Bike. Play to have fun - not to win by abusing wheelie. I can't drift with those, anyways.
