well u cant upload scratch to youtube (.sb files) there is no way really if i understand u 100% . so what u need is to upload a scratch project to youtube correct?

I suggest hypercam
It's easier then camstudio and it's free
Just select the whole screen as the dimensions and put scratch in presentation mode then hit the green flag

well i use something but it gets really complicated i have some vids on youtube from scratch www.youtube.com/user/davcoool
