When I download Scratch, I always delete the sample projects, sprites, and sounds. Why do I do this? Because it takes up a lot of space on my computer, and I never use them anyway.
It is annoying having to delete all of those files when I install Scratch, so why don't we have the option to choose what we want to download?
When intalling, you should get a little message that says this:
--------------------------------------------------------------------------------------------------------------------------
install sample projects
install sample sounds
install sample sprites
You can check whatever you want to install. Like my idea?

I don't worry about space, I have Scratch on my USB 230 GB hard drive

Well I know NSIS, the installation system used by Scratch... I can make an installer which lets you select what to install...
