Can't you save projects? I click the download button, select 'Save' and then let it download. Then I open up the project and play it. It's more fun downloaded for most things, but back to it.
I don't think this has to do with having a different version of Windows, Macintosh, or Linux.
What I'm going to be explaining is for Windows (because that's what I use). If you have a Macintosh or Linux, then this is probably useless.
When I download and save projects, I get them on my desktop. I have a folder called 'Scratch Stuff', where I place the downloaded project in. I don't get to the projects by clicking on the 'normal' Scratch icon. I click on the project from the folder. If I left it on my desktop, I would double-click on it. Is this what you mean? I don't open up any old Scratch application and try and get to the project; I open up the Scratch project straight.

And what do you mean play? You can play it, but put it in presentation mode and press the green arrow. If you mean actually being able to save your progress in the game however, the programming for a functioning save/load feature is next to impossible to create so it hasn't been thought of yet.
