Hmmm.... Well, if you want ideas, you could do an obstacle course like thing, where there are like 6 platforms going very fast above a bottom platform and the platter would be on the top platform, which isn't moving.

Like I was saying, I can only help you so much, and if this is a school thing, you need to do it yourself. I and others can help with bugs, but we aren't going to design your game.
If you want ideas, submit an order to the idea shop.
Anyway, I have given you several scripts, so you just need to look at the entire thread and then you will have the answers to your questions.

Well, you could make the level scroll. This means that part of the level is off the screen and the level will move to follow the character. The rest of the level will show as the character reaches that part.
This is a guide that you can take some useful scripts from to help you make scrolling levels.

I don't think this project was meant to be hard. How long have you been learning Scratch in school? What have they taught you so far? If this is too hard, maybe you shouldn't be doing things this advanced.
