Is there a way to uninstall scratch but save the projects?

Yes, I believe you can save projects to places like your desktop and things in that matter. But, I don't see the point in doing so, because then you can't read the files.

Easy. All you have to do is go into the Scratch Projects folder is, then drag in the projects you put on your desktop, or wherever you saved them at.
Scratch on!
My most viewed and loved project is a farting sound board.
