.gif or Flash

How to make scratch projects convert into (.gif)s or programs which will open in Flash player and we can play it directly, should not open in scratch

I don't think that there's a way to do that besides taking screenshots of the project while it's running...

^^Yes, that'd be the only, overly complicated way. Another solution would be perhaps recording it and using an utility to convert the resulting video to .gif.
