Really, Is velocity always more realistic? Sometimes it would be better to just have normal movement? Imagine walking a step and then sliding for 3 seconds. Not realistic at all. What does everybody think?

Can you stop right way after you are running as fast as you can? No you can't, you would have to slow down a bit first. Even the mario games had a bit of slide in it but some games just overdo it.

Its definitely more realistic in car games.

Well, in reality, there is some degree of friction affecting movement; sliding is only a reflection of the forces of friction acting upon an object that is trying to stop. It's only that some some games distort the sliding thing too much such that it becomes unrealistic as archmage suggested.

What I mean is:
does velocity ALWAYS make things more realistic?

Assuming it's not overdone, velocity usually makes movement more realistic.
