A 2d racing game. the gimmick is your a sloth racing cheetas you need to find the car parts . After that you ride the super car and go ten times as fast as the cheetas

Any single-threaded game is fairly simple to make 1s1s. For example, a board game, or turn-based games could be 1s1s. If you need 1c too, I give up.
filler, cheetahs can run 75mph, for a few minutes at a time. If you were to go 10x that speed, you would be going faster than the average passenger plane.

Now back on topic, since I'm sure everyone hates it when they're made fun of like that...
You could try to do a 1s1s platformer (array based),
a 1s1s brick breaker
a 1s1s music generator
a raycaster
a raytracer
an OS
A very advanced 1s1s programming language, with editable images, variables, many possibilities for calculations/graphics while still making it easy for a newbie to use.

BTW, I tried 1s1s brick-breaker, and it is impossible...unless you create 2 lists for each of the 50+ blocks.
