Sadly, there are no blocks in Scratch for hiding lists. 
....yet. 
I know what you're thinking! "Neptune! Get rid of those filthy advertisements and give us back the Zarathustra siggy, you horrible person!" Well, don't worry about it, the Zara siggy will be back soon, new and improved! ^^ Meanwhile, just do what the sig tells you to. >.>Offline

You can hide it behind a sprite...that's about the best you can do at this point.

Yeah, hopefully Scratch version 1.4.1 will have a "hide list" block. I remember how relieved and happy all the members were when 1.3.1 came out with the hide/show variable block.

It was actually 1.3, not 1.3.1.
Also, if 1.4.1 comes out, it will be to fix any bugs that may have arisen, and I don't see any need for that since 1.4 is pretty much bugless.
Funny story, the origins of the word "bug" in computers. It arose because when the first computers were being tested, one of them failed because there was a moth stuck in it

1.4. has the check box for showing/hiding lists, but you can't do it once you're in a game

You can't yet, as there are no blocks that can do that for you (as the others have said before me) . However, you can always have a sprite that covers the variable.
