Not necessarily, they could be gatherers (not hunters) or farm through some kind of weather-based system. They could also have the other animals like the sheep, oxen, and so on (I'm assuming you mean no other ponies, not no other animals) help with plowing and other heavy lifting. Also, since there would probably be less ponies (I'm also assuming you mean only pegasi are left, not that everyone has turned into pegasi), they could just live closer to the ground and graze instead of eating what I'm assuming are imports from Equestria.

As for the moon and sun, the pegasi could fly to the sun and move it around. That would be awesome and also probably impossible, unless the sun is like in Discworld where it's just a mile-large ball of fire.
