I know about squeak, and I go to appearances, and then window colors, but there is no selection for variables.

There's a tutorial project if you look for it.
Basically, you shift-click the R in Scratch logo at the top left of the Scratch app. Then from the menu, choose turn fill screen off. Then right click or alt-click the variable until icons show up around it. Choose the "menu for me" icon and then choose "change color".

^ that only changes it for you, not for online
As of yet there isn't a way to do it easily, especially if its a large varable, but you could use sprites with the costumes 0-9 and use the "letter of ()" block

Actually, variable watchers that were modified using the method above work online, both in the Java and Scratch player!
