It has happened to me 6 times in a row today. I know its easy to fix but its a huge pain.
As I am new to scratch and I am trying to make a very big game my scripts seem huge so it might just be because of memory as it said on the main post. The thing is that it happens at exactly the same time when I am doing the same thing each time. Its really strange.

I tried the save technique (save, quit, pull it back up, keep on saving until the text reappears) and it worked, but the bug keeps on coming back. What can I do to make it stop?

I was developing the 80 level version of The Level Game and I was testing something. Then I was about to go to save, the dissapearing text bug happened, Scratch minimised itself, then wouldn't re-open and closed itself, then locked up my computer completely. I had no other programs open. At the time I was resuming my game.
I lost only 10-15 minutes of work, so it could have been worse, but it caused me to be forced to shut down my computer.

Now I'm getting an even bigger problem. This same project of mine gets this glitch every time it is saved. When I'm done making and recovering it, I will link to it to see if anybody can find the error.

You could just go in to the Windows Task Manager and close Scratch.

I hope it gets fixed in 2.0, i came across this once and lost a project.
Other Similar Glitches on my scratch 1.4:
- When moving a Huge Script or doing something that looks like a lot of memory is required, the Mouse pointer appears to be at the back of the program and can't be clicked.
- A Huge Long Script lost their lower parts, have to spit them into chunks to edit them.
- When there's too many sprites showing up on the Sprite Browser, it totally looses it's GUI
