I was creating a project on Scratch with a few hours of unsaved work since my last save, when suddenly, Scratch Project Maker freezes, completely. I tried everything possible except closing it out and task manager because I did not want to lose my work. Is there anything I can do so I can't lose my work, or will hours of finally figuring out a working script go down the drain?

This thread probably belongs best in Bugs and Glitches, since it is about a problem that happened with the Scratch website. Here it will be easier for people to see that you the bug, and hopefully help you sooner.
As far as the exact problem - there's not much you can do to recover the project. The best thing you can do is save more often when working on projects. The same thing has happened to me, and I know it's frustrating. Hopefully in Scratch 2.0 there might be some auto-saving features.

Thank you for the advice! As far as the project, it seems to have become better than before it froze as well. The auto save would be great if possible. I think it could save a lot of great projects from freezing. Perhaps even there could be a crash recovery just like the Internet.
