Nope, sorry! Since Scratch has interactive parts, making it into a movie would be highly impossible. The .mov format is for like real movies, not for interactive movies.
However, you may be able to use screen recording software like Jing or Camtasia to record only the Scratch player and then upload it to Youtube after saving it using the .mov format.
