There's not a way to hide or show a list. You can use a sprite to hide and show it. To do this use:

hide
to show the list and:
show
to hide the list.
If you want to do it manually, go to Variables pallete, then go to the list block, then click the checkbox and you've successfully hid a list!  smile

There is no such feature for

 hide [list v]  // They are under the lists palette
and
 show [list v] // They are under the lists palette
However, in the Scratch 2.0, they may be implemented.
