Me and my friends have made a server so that we can make buildings and destroy them as we wish without bothering anybody.

On most it is not. While some have a "everything goes" policy, this is obviously not a discussion of such.
Griefing is so named because it causes grief. Often people without good intentions destroy other's hours of hard work to see the reaction. It is essentially the "trolling" of Minecraft, and while most servers take measures to prevent it (so yeah it's bad) not all can or will, and end up having their server burnt to the ground. (It has been the death of a few servers on here itself)

Upon reading this I have decided not to grief on servers, but instead ask the OP for the map and blow it up. Or grief on my own servers.

My policy is that I ONLY grief people who deserve it.
If someone is scamming people out of donation money, then I can grief their server and still have a conscience. Same for if people are being really racist and/or homophobic.
I don't grief servers that don't deserve it. It's not fun or funny.
