I am about to start teaching a group of 5 or 6 students basic 'SCRATCH'
1. I would like all their projects in one place (FOLDER/GROUP) not sure of correct terminology.
2. They will each have their own user name and will be adding projects from home computer as well as in classroom.
3. Only the students in the Group will be able to add to this Folder/Group
4. This is required so that I can easily check students work NOT to stop other 'scratchers' from viewing

The best way to achieve this would probably be to create a new gallery.
Browse to your user page and scroll down to the Galleries section. (bottom-left corner)
Click on 'create a gallery'.
Add all necessary tags and information.
If you would like to restrict the people who can add to this gallery, I suggest selecting the option of 'Only Me' or 'My Friends' when creating it.

This is probably the best option, but you might want to check occasionally to make sure they are adding their projects!

You can make their projects in your favorites or a gallery, once they're uploaded.

trinary's option seems to be a viable option, but I encourage you to try asking around at Scratch ED, the Scratch website designed for teachers, to see if there are any other ideas on how to approach your problem.
